French chef and pâtissier Jules Gouffé had an immense impact on the evolution of French gastronomy due to the extensive content he collected to complete his masterpiece, Le Livre de Cuisine. The majority of his works were translated into English by his brother, Alphonse Gouffé, Head Pastry Cook to Queen Victoria.
